I’d suggest two action stations – one for crepes, one for omelettes. Crepes always go over well, and make sure to have a couple fruit sauces (maybe an orange and a strawberry) and whipped cream on the side. If you have enough space, i’d also have a waffle station, with maple syrup, butter, and a couple fruit sauces to go with those as well. Have a nice fruit display, and I would serve a yogurt sauce and/cottage cheese with it. Have some bacon, sausage, quiche lorraine, scrambled eggs, and maybe some eggs benedict (hollandaise on the side) assembled in chafing dishes. A juice bar with 3 or 4 kinds of juices (along with coffee) is always impressive. The more options you have, the more attentive you’ll seem to your guests.
